Modified from Southern Living's Recipe
1/3 cup chopped smokey tempeh fakin' bacon (homemade recipe for this coming soon)
Vegetable cooking spray
2 cups or one can of garbanzo beans
2 cups drained fresh field peas or green peas
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons fresh lemon juice
1 garlic clove, pressed
1 teaspoon kosher salt
1-2 tablespoon of soy sauce, tamari, or liquid aminos (optional)
1/4 teaspoon smoked paprika
dash of hot sauce (optional)
1. Sauté tempeh in a small nonstick skillet coated with cooking spray over medium heat 3 to 5 minutes or until crisp. (Optional step since tempeh is precooked but brings out the flavor, can also bake the tempeh).
2. Process all ingredients, except tempeh and paprika, in a food processor, adding up to 3 Tbsp. water, 1 Tbsp. at a time, as needed to reach desired consistency (if using canned beans use water from can). Transfer to a bowl, and top with paprika and crisp tempeh. Serve with pita chips, chopped veggies, or use in wraps and sandwiches.
